The challenge I have chosen is to go vegetarian from Monday to Friday. I chose this challenge as it is something that I have been considering doing for some time but have not had the push I needed to start it. Going vegetarian is something I have wanted to do for health reasons, environmental reasons and a love for animals. I decided that I would start by doing it during the week days as I want to get used to it and make it work. I think this challenge will be hard as I am some who would not have eaten a lot of vegetables before so finding alternative meals that I will like will be hard. It will also be a challenge when I am eating out to find meals I like. I think by allowing myself to do this challenge from Monday to Friday will reduce pressure and allow myself to adapt to the change in diet so that it can be affect in the long term. My sister is vegetarian and this will allow me to gain support throughout this journey.

You have chosen a really interesting challenge. Food, sustainability and wellbeing have so many elements - the practical, the cultural, the systemic - as you talk about above. It's great that you are showing compassion for yourself and recognizing what will work best for you (i.e. to focus on doing this on the weekdays). I went out for food on Friday night with friends some of whom have taken up being vegetarian or are already vegetarians. They were able to recommend what was good. I have still to sit down and open up the countless amounts of cook books I’ve got over the years and plan meals. Vegetarian meals were bought for me as soon as I mentioned it to my parents but I want to look at making my own meals as this will allow me to reduce my processed food intake and allow me to add ingredients I like, in order to make the meals more enjoyable. I’ve still to discuss with my sister any advice but I will ask about a cauliflower soup she made before which was particularly nice. Respond
