I think most clued in vegetarians recognise that tofu can be a great source of protein. Today I tried it for the first time, I can definitely say that I am not a fan. I don’t know if it was the look or the texture of the tofu that turned me off, but I am willing to give it another go. I am proud of myself nonetheless as trying new foods and recipes is something I want to get better at during this challenge.
One of the biggest surprises I have had over the last week is that I don’t miss eating meat. I feel I am making healthier food choices while being more environmentally friendly. I have a feeling this is a lifestyle I can get used to and even continue to cut out meat from my diet after the 30 days.

Changing patterns (i.e. habits) does mean we have to push ourselves outside our comfort zones sometimes. And you are doing it already. Darren Clarke commented on Day 6: Tofu 4 years agoHi Ella I really like the Happy Pear for vegetarian recipes. With tofu, I also really struggled at the beginning so stick with it, it can take time to like it. I love the following marinade: 2-3 tablespoons of soy sauce or tamari (if you have a gluten intolerance) 2cm piece of fresh ginger finally chopped 2 garlic cloves finally chopped 1 teaspoon sesame oil (optional) 1 teaspoon of maple syrup (optional) I cut my tofu into thin strips (about the width and thickness of a Chomp chocolate bar). I marinade the strips with this dressing for 1-2 hours in the fridge (or longer if you have time) and turn the strips half way through to coat them in the marinade on the second side. When done, I bake in the oven at 180°C for about 15-20 mins turning them over half way through to get them cooked on both sides. I love tofu now, so stick with it!
