This is my first my post but I have been staying on track with my challenge. When I first started I decided to take things head on and on Friday I made my first attempt at trying to get something vegan which wasn’t exactly easy, as I soon figured out that Mace has very little to offer when it comes to their vegan options. I decided to get a falafel and lettuce roll with, no sauce and no butter however, I soon realized that this was a poor choice none the less I carried on with the challenge. I was hit with criticism by family and friends but my mum and my girlfriend have decided to take part in their own challenge and try to support me along the way. I also found that vegan food can be expensive but I didn’t let that stop me and last night I cooked a vegetable stir-fry. I have no started using almond milk in my cereal which has been interesting. This challenge is certainly pushing me out of my comfort zone. Along the way I hope to inspire more people to try and be more sustainable in their everyday life.

cCHANGE Team commented on Day 6: Day 6 4 years agoHi Aidan and welcome to Ripples of Change! My name is Leonie and I am part of the cCHANGE team. Good to see you were able to log on. Sorry about the tech probs. Over the next 30 days, my colleague Heidi and I are going to be following your challenge and will support you and hopefully offer you new perspectives. What a great challenge and you have really been pushing outside your comfort zone! Fantastic! Great to read how you are experimenting and trying new things. Isn't it interesting the reactions we get from family and friends when we do something a bit different? We'll cover that a bit more next week. But I think it's fantastic that you have inspired your mum and sister. Really looking forward to following your updates and reading what you learn. Let us know if you find any good recipes. All the best, Leonie Respond
